About the role:
We are seeking a highly skilled and passionate Sushi / Sashimi Chef to join our team. The successful candidate will be responsible for:
Preparing and presenting high-quality sushi and sashimi to restaurant standards
Filleting and portioning of fresh fish
Maintaining kitchen hygiene, stock levels, and compliance with food safety
Collaborating with kitchen staff and front of house team for smooth operations

Skills & Experience:
To be considered for this role, the ideal candidate must have:
Minimum 1+ years of full-time experience in a similar role (Japanese cuisine)
Proven knife skills and fish-handling experience (including filleting)
Deep knowledge of traditional sushi/sashimi preparation and presentation
Understanding of HACCP and food safety procedures
Strong work ethic, attention to detail, and teamwork skills
Ability to work in a fast-paced environment and under pressure

Tuesday to Sunday
Lunch and dinner shifts (approx. 38 hours/week)
